Spicy prawn spaghetti

Spicy prawns, olives & wholemeal spaghetti

Ingredients:

130g Wholemeal Spaghetti

250g Cooked King Prawns

1 sliced red and 1 yellow peppers

20g Black olives

1 medium onion, diced

1 tbsp Olive oil

Pinch salt

Pinch Fresh ground black pepper

Pinch Chilli powder

100gms Tomato Passata

10gms Fresh basil

4 ripe chopped tomatoes

2 tbsp sunflower and pumpkin seeds

Method:

Heat pan on a gentle heat add olive oil, diced onion, peppers and cook for 2 minutes or until the onion is transluscent

Add the fresh tomatoes and chilli powder and cook for a further 2-3 minutes

Add the salmon fillets, pasatta sauce, olives, salt, and black pepper and gently simmer until the salmon changes colour from dark to light pink and is flaky in texture

Meanwhile, fill a deep pan with water, a small pinch of salt and bring to the boil

Add the pasta and cook until al dente, or floppy but firm

For wholemeal pasta this should be around 7-8 minutes

Drain the pasta in colander and place back into pan

Add the raw spinach and prawns, add warm sauce and toss together

Divide into two bowls, sprinkle with the seeds and enjoy

  1. This looks a really lovely recipe. I don’t eat prawns, but you could easily swap these for chicken pieces or salmon fillets, or even a meat substitute like soy as the basic sauce is really tasty.

    Looking forward to making this.

    1. Yes it is a lovely recipe. I’d be happy with any of the combinations you suggest, but my favourite is prawn.

  2. This looks absolutely delicious! But will the ingredients in this lovely meal help reduce the absorption of high cholesterol in my bloodstream?

    A recent physical warned me to augment my diet.

    1. Thanks Tim. I think that is something we must all do, particularly as we age.

      Reducing cholesterol in our blood stream is something we have to continually work on. I believe it’s a lifestyle choice. There is nothing in this recipe that will add to your cholesterol problem so you can give it a go. I’m pleased you like it.

      There are foods that will help lower your cholesterol and is something more of us should consider.
