Avocado with Eggs and Feta

“Recipe adapted from BBCgoodfood.com”

Ingredients:

2 tsp vegetable oil

1/2 tsp dried chilli flakes

1 large garlic clove,

sliced 2 large eggs

400g can black beans

250g cherry tomatoes

red/orange pepper sliced

1/4 tsp cumin seeds

150 feta cheese 1 avocado halved and sliced

handful fresh chopped coriander

1 lime, cut into wedges

Method:

Heat the oil in a large non-stick frying pan

Add the peppers, chilli and garlic and cook until softened

Crack eggs and place on either side of the pan

Once the eggs start to set, spoon the beans and the tomatoes around the pan and sprinkle over the cumin seeds

Remove the pan from the heat and scatter over the avocado and coriander

Add crumbled feta

Squeeze over half of the lime wedges

Serve with the remaining wedges on the side for squeezing over

  1. Thank you for putting on some delicious, healthy recipes. This looks really delicious and healthy too.

    It would make such a change not to have cereal on a morning, and maybe have this for a treat every once in a while.

    It reminds me of Shakshuka which is a real favourite of mine.

    1. Thank you for responding. And I’m glad you like the recipe. Yes, in Covid-19 it has become even more important we think about our physical health as well as our mental health.

      I do think also that initiating a healthy diet is initiating a healthy mind and a healthy lifestyle.
