Banana loaf


110g (4 oz) Golden Caster Sugar

75g butter (2.5 oz), softened

100g (3.5 oz) Wholemeal flour

125g (4.5 oz) plain flour

2 eggs

2 tsp baking powder

4 mashed ripe bananas

50g pecans (1.75 oz) halved

1 tbsp golden caster sugar to finish (optional)


Heat the oven to 180/fan 170C/gas 4

Beat the sugar, butter, wholemeal flour; plain flour; eggs; baking powder and banana together

Stir the crushed pecans into a lined, buttered 450g – loaf tin

Bake in the oven for 50 minutes

Sprinkle with golden caster sugar if required

As an alternative to banana; you could also use All Bran or apple and cinnamon, which are just as delicious

  1. This sounds good.

    Currently eating banana bread with chocolate chips in it. It is different, but I think I prefer it without the chocolate chips.

    I think my niece made it. She has a thing for chocolate chips.

  2. Yummy, banana bread is always a good thing. I guess I should probably learn how to make it myself one of these days, since I like it so much.
