Chicken & Lentil One-Pot

Easy One-Pot Chicken With Lentils



1 tsp vegetable oil

4 large bone-in chicken thighs, skin removed

1 medium onion, thinly sliced

1 garlic clove, thinly sliced

2 tsp plain flour

2 tsp tomato purée

150ml dry white wine

200ml chicken stock

50g green lentils

½ tsp dried thyme


Heat the oil in a non-stick shallow pan

Add the chicken and gently fry on each side until lightly brown

Set aside. Add onion and garlic into the pan and cook for 5 minutes

Stir in the flour and tomato purée, then stir over a low heat for 2-3 minutes

Add the wine, stock, lentils and thyme

Bring to the boil, reduce the heat, cover and simmer for 5 minutes

Add chicken, cover and simmer for 25-30 minutes, or until lentils are tender and the chicken cooked.

  1. Looks very tasty and easy to prepare. With wine added I’m sure it’s very good. Wine seems to bring out the flavours in dishes, in my experiences.

  2. This looks a really easy recipe. I like the idea of throwing everything thing in one pan, it cuts down on the washing up.

    If you leave out the wine and thyme and add curry powder I think you’ll have a really easy curry too!

    1. Yes it does make life easier when we have less preparation time. I’m not great with wine, but the idea of turning the chicken into a curry also sounds great!

  3. I used this recipe as the basis for a vegetarian version last night with carrots, potatoes, courgettes and onions instead of chicken and it was delicious.

    As usual I got the proportions wrong for two people, but that just means there’s lots left over for today!

    1. Yes it’s convenient when that happens! Recipes are great because they can always be adapted to make two to three different takes on the original recipe.
