Chilli Chicken & Noodles

Ingredients:

1 packet medium boned chicken thighs

1 clove of garlic, peeled and crushed

1 bunch of spring onions, finely chopped

2 medium fresh red chilli, thinly sliced

Small fresh ginger root, peeled and grated

Splash of soy sauce

Juice of whole Lime

1 packet soft noodles

A handful of spinach

Method:

Add spring onions and garlic in frying pan with chopped ginger and oil

Add chicken and continue to cook

Cover in soy sauce and add lid

Add juice of a lime and a little water and cook chicken until cooked

Make noodles in another pan

Add noodles to chicken frying pan and cut up chicken

Add spinach to wilt

  1. This looks a great recipe and pretty healthy too. It’s got all the flavours in I like, and I guess you can swap out the chicken for tofu or soy or even fish for variety.

    Delicious!

    1. Yes, it is a great recipe, it’s healthy, got more than enough flavour that you’ll like and you can swap and use an alternative protein to children.

      And it’s delicious too.
