Chocolate Brownies

Moist, chewy and absolutely loaded with chocolate.

3 large eggs

1/2 cup sustainable source of vegetable oil

2 tablespoons water

2 teaspoons pure vanilla extract

Line a 9×9 square pan with foil or parchment paper, leaving a couple inches of overhang on two sides (this will allow you to lift the whole tray of brownies out of the pan for easy removal)

Grease the foil/parchment

Combine cocoa powder, sugar, salt, flour, coffee powder, and chocolate chips in a large bowl

Whisk until combined

Add eggs, oil, water and vanilla and stir with a rubber spatula until combined (it will be fairly thick)

Pour the batter into the prepared pan and smooth the top Bake for 25-35 minutes (start checking at 25 minutes)

The brownies are done when a toothpick inserted into the centre comes out without raw batter on it

Be careful not to over bake

Remove from the oven and place on a cooling rack

  1. These brownies sound yummy. I believe we should all enjoy treats every now and again, so I will definitely make these soon.

    1. Yes, I agree. That’s probably where the saying, “a little bit of what we fancy does us good” comes from.

I personally believe it’s true but it’s important we learn not to over-indulge, particularly when it comes to eating sweet things.

We would love to know how you get on when you’ve made them.
