Polenta Pizza

“Based on a recipe from BBC Good Food.”

For the base:

100g polenta

400ml vegetable stock

Dried basil

Dried oregano

Tiny bit of almond milk

For the tomato sauce:

Tomato puree/tomato Passata

Dried basil

Dried oregano

For the toppings:

Mozzarella

Any veg of your choice (courgettes, sliced tomatoes, peppers etc.)

Method:

Bring stock to the boil in a pan

Constantly whisk whilst adding the milk, and then add in the polenta until it starts to thicken, still whisking

Grease a baking tray – pour polenta mixture into the baking tray and leave to cool

Prepare the tomato sauce by mixing ingredients together

Add the sauce and toppings of your choice to the polenta and grill into the oven for around 5 mins

Sprinkle with dried basil and season as you like

    That looks amazing! I absolutely love Polenta, but have never thought about making a pizza base with it.

    I am definitely going to give this a try.

      I’ve tried and love it. A completely different way to eat pizza, minus the calories.
