Potato & Lentil Curry


1 large onion, finely chopped

2 tablespoons olive oil

1 tablespoon curry powder

1/2 tablespoon turmeric powder

1 tablespoon tomato puree

4 cups vegetable stock

4 potatoes, cut into small cubes

1 1/2 cups dried red lentils, rinsed

Salt and pepper

Two cardamom pods Basmati rice to serve


Brown the onion in the oil in a large saucepan

Season with salt and pepper

When the onions are soft add the curry powder and turmeric powder and gently cook for 1 minute, while stirring

Add the remaining ingredients apart from the potatoes and bring to boil

Simmer gently, uncovered, for 10-15 minutes or until the lentils begin to soften tender

Add the diced potato and simmer for a further 10-15 minutes until the potatoes are soft

 Taste and add more seasoning and/or water if required

Prepare the basmati rice cooked with two cardamom pods for flavour and aroma

Serve the curry over the rice

  2. I agree with Tim, this looks really tasty and it’s such a simple recipe too.

    This could be my new ‘go-to’ curry recipe, by swapping potatoes or lentils, for chickpeas, or other vegetables or fish.

    1. I agree also. Yes, the good thing about curry is you can alternate what you put into it, so for that purpose it becomes a ‘go-to’ dish.

      My preferred ingredients are either lentils, or chickpeas. Any would work, without the meat. It has to be mild.
