Rhubarb and Elderflower fizz

This easy to make recipe is taken from Realfood Tesco.com

A final goodbye to the long warm days of summer



300g (10oz) rhubarb, trimmed and finely sliced

50g (2oz) caster sugar

50ml (2fl oz) elderflower cordial

Sparkling wine

Orange, lemon or lime zest curls, to garnish


Place the rhubarb in a pan with the sugar and elderflower cordial and 2tbsp of water

Bring to the boil and simmer for 10-12 minutes until the rhubarb is soft

Blitz in a blender until smooth; then leave to cool

Put a large spoonful into two champagne glasses and top up with sparkling wine

Garnish with orange, lemon or lime zest curls
