Salmon and Broccoli cutlets

Ingredients:

1 tin red salmon

2 large broccoli florets

2 medium potatoes

2 spring onions

2 tbsp light mayonnaise

Flour for covering

Salt and pepper

Method:

Chop up and boil potatoes until soft

Add broccoli to pan with about 3 minutes until potatoes are soft

Chop up spring onions

Drain potatoes and broccoli and mash roughly in a bowl

Add spring onions to the potato mix

Add tin of red/pink salmon or tuna

Add salt and pepper to taste and mix in the mayonnaise

Put flour on a plate (add salt and pepper if you wish, not essential)

Roll fish mixture into balls and cover in flour mix, flatten

Gently fry until golden brown on each side

    1. Thanks, yes. It is delicious. Not too keen on chilli sauce myself, but it’s always nice to mix and adapt recipes to suit our taste.

      It’s what makes recipes so interesting.
