Spicy Cajun chicken with couscous

Cajun chicken with couscous


4 skinless chicken breasts cut into bite-sized pieces

1 tbsp Cajun seasoning

1 cup couscous

1 cup hot chicken stock

125g ready-to-use Puy lentils

100g dried apricots

1 tbsp olive oil

2 red onions cut into thin wedges

1 bunch spring onions, chopped

Small bunch coriander, chopped


Heat oven to 200C/180C fan/gas 6

Sprinkle the chicken with the Cajun spice and place in a single layer in a roasting tin

Bake for 20 mins until the chicken is cooked and then set aside

Add the cup of boiling water with a chicken stock cube to the couscous and stand for 10 mins, adding the lentils and chopped apricots for the final 5 mins

Place into a large bowl with the chicken and toss together

While the couscous is ‘cooking’, heat the oil in a large frying pan and soften the onions for 10-15 mins

Toss the onions into the couscous with the coriander and some seasoning

then mix well and enjoy

  1. My husband would probably love this recipe because of the spices. I don’t eat a lot of spicy foods due to GI problems. I wish I could. Looks good though.

    1. Thanks Lisa and I agree. This is a particularly lovely recipe. We’ve made this recipe with tuna in place of chicken and it’s absolutely delicious.

  2. This looks a nice recipe, although I will have to go easy on the cajun spices. Also it looks simple enough to replace the chicken with salmon or tuna and maybe the couscous with quinoa too.

    I’ll definitely give this one a go.

  3. I made this dish today and I have to say it was a huge success. I replaced the chicken with fresh tuna and it was absolutely delicious!
