Spinach & Feta pancakes

SPINACH AND FETA CHICKPEA PANCAKES

Ingredients:

200g Chickpea (Gram) flour

2 tbsp Chives, chopped

Olive oil

Onion, diced

Nutmeg

300g Spinach leaves

75g Low fat feta cheese

Method:

Whisk together the flour, chives and lots of seasoning with 300ml water, then leave to stand for 20-30 mins

Heat 1 tsp of oil in a frying pan and gently cook the onion until soft

Add the nutmeg and spinach and stir well

Crumble in the feat and season with black pepper

Brush a non-stick frying pan with olive oil and spoon enough of the batter to make a thin pancake

Turn over after a couple of minutes or when the edges have set

Cook for two minutes more before adding a spoonful of the prepared spinach mix and then fold in half

Repeat until all the batter has been used

You should be able to make 4-5 pancakes

Serve with the remaining crumbled feta

  1. This looks so nice. I am trying to reduce my wheat intake, as it doesn’t seem to agree with me as much as it used to, so being able to swap out for something else is great. I hadn’t thought about making gram flour pancakes but I like Indian food made with gram flour so this is a brilliant alternative.

    I love feta and spinach. They make a really nice combination and I imagine the nutmeg gives the flavour a little lift too. Definitely one on my to make list!

    1. Thank you. I can’t say Feta’s on my list of favourite foods, but together I agree spinach & feta make a lovely combination.

      It’s important for anyone to include as much variety into their diets as possible so this completely works. I myself would probably swap feta for an alternative, not so salty cheese, but definitely is one for anyone’s to make List!

  2. I made these pancakes and I have to say they were delicious. I was a bit dubious about adding nutmeg but they tasted really nice. There was just enough nutmeg to give the filling a hint of spice without being over-powering.

    Im going to try it with different fillings too; maybe tuna and cheese. I can highly recommended it.
