Squash Noodles


1 medium packet butternut squash noodles

1 Small onion diced

1 Medium red/orange pepper

Diced Handful of button mushrooms

Diced 2 medium tomatoes

Diced Tomato puree

1 tin of anchovies

Parmesan cheese (optional)


Fry diced onions in a small amount of olive oil until opaque

Add tomatoes and peppers and gently cook for around 7 minutes until soft

Add anchovies and stir until dissolved

Melt the stock cube in a cup of warm water and add to pan with a generous tablespoon of tomato puree

Turn up the heat and when simmering add the boodles and then add the mushrooms Simmer for around 2-3 minutes

Serve in a bowl with a generous grating of parmesan cheese

  1. I look forward to your recipes and this one looks just as delicious as the others.

    I love anchovies and like the idea of replacing pasta with butternut squash. It’s basically a big bowl of your 5 a day!

    1. Thanks. I absolutely agree. Although pasta is a good carbohydrate food, I always find it good to moderate what we eat.

      I also love this recipe because it’s quick ‘n’ easy to make and it’s tasty.
