The Perfect Summer Sandwich


4 slices of sourdough bread

4 eggs, at room temperature

2 Medium tomatoes thinly sliced

Mayonnaise (or you can make your own)

2 egg yolks

Vegetable oil

1 tsp white wine vinegar

1/2 tsp mustard powder



Put the eggs in a saucepan of cold water. Bring to the boil then simmer for about 6 minutes. Remove from the water and place in a bowl of cold water

To make your own mayonnaise:

Put the egg yolks in a bowl, add the mustard powder and whisk. Add the oil a few drops at a time, whisking as you go, making sure the oil is fully mixed in before adding the next

As you whisk in more oil and the mayo starts to thicken, you can start adding the oil in slightly larger quantities until you are steadily adding it in a thin stream. Add the white wine vinegar and season with salt

Peel and mash the eggs. Mix in 2 tablespoons of the mayo, then season with salt and pepper. Add a teaspoon of the vinegar to start with, adding more to taste

Spread the mixture onto one slice of bread, top with the tomatoes, and cut into preferred sandwich shape

  1. Delicious. Egg and tomato is my favourite sandwich of all time. I’ve never actually made a proper sandwich like this but now I have a recipe, I will definitely give it a go.

    I will have to make it soon as the summer in the UK only lasts about 1 week!

  2. My mum used to love egg and tomato sandwiches. I love them too, but struggle with the creamy taste sometimes.
