Grilled Flatbread with Figs, Feta Cheese and Smoked Salmon
Ingredients:
300g of pizza dough
2 ripe figs, sliced 1/2cm thick, skin on
1 oz feta cheese, crumbled
2-3 slices smoked salmon
25g rocket leaves of spinach leaves
1 tsp extra virgin olive oil
Method:
Prepare the dough. You can make it yourself or buy good, ready-made pizza dough in all supermarkets nowadays
When the dough is ready, set the oven grill to high. It needs to be about 400f or 200c
Alternatively you can do this on the stove in a griddle pan
Prepare all the toppings.
Slice the figs into 1/2cm thick slices,
Crumble the feta cheese
Pull the smoked salmon into bite-sized pieces
Spread or roll the dough into two very thin, roughly oval shapes
Spray or brush the surface of the dough with some of the olive oil and place that side up on the grill or down on the stove
Cook until the dough begins to firm up and gets a nice brown colour. Brush the uncooked side of the dough with olive oil and turn over
Add the figs, cheese and salmon to the top of the flat bread and close the oven for about two minutes so the toppings can get warm and the bottom of the bread can finish cooking
When the bottom is well toasted, remove the flatbread and top with the rocket and a drizzle of extra virgin olive oil
This recipe looks so nice! It contains two of my favourite ingredients, feta cheese and smoked salmon and is definitely on my list of favourites.
