Summer Watermelon Salad

'Delicious and refreshing'

Ingredients:

Flesh from ¼ of a watermelon, cut into bite-size chunks

Half a cucumber, diced

100g Feta

Few sprigs of chopped fresh mint

1 tbsp gluten-free balsamic vinegar without sulphites

Black pepper to taste

Method:

Mix the chopped watermelon, cucumber, feta and mint together in a large bowl

Add the balsamic vinegar and black pepper

Stir then serve
