Brioche French Toast
"Recipe adapted from BBC Good Food.com"

Ingredients:
2 large eggs
80ml (2½ fl oz) whole milk
40ml (1½ fl oz) double cream
1 tsp vanilla extract
½ tsp ground cinnamon
4 thick slices of brioche bread
2 tbsp (30ml) vegetable oil
2 tbsp butter
Icing sugar (for dusting)
Fresh berries (optional, for serving)
Method:
To Make the Custard
In a mixing bowl, whisk together eggs, milk, double cream, vanilla extract, and ground cinnamon until smooth
Arrange the thick brioche slices in a shallow dish in a single layer
Pour the custard mixture over the brioche
Let it soak for 2–3 minutes, then gently flip and soak for another 2 minutes
Fry the French Toast
Heat 1 tablespoon of vegetable oil and 1 tablespoon of butter in a non-stick frying pan over medium heat until it begins to foam
Carefully lift two slices of the soaked brioche and place them into the pan
Fry for 3 minutes on each side or until they are golden brown and crisp
Transfer the cooked slices to a wire rack over a baking tray and keep warm in the oven
Repeat with the remaining brioche, adding the remaining oil and butter to the pan as needed
Serve and Enjoy
Dust the warm brioche French toast with icing sugar and top with fresh berries if desired
Serve immediately for the best texture and flavour
