Breakfast Muesli
Ingredients:
300g rolled oats
1 vanilla pod
200ml honey
100g whole almonds
100g raisins
100g cranberries
50g puffed rice
25g mixed seeds
Method:
Bring the honey to the boil in a small pan
Add the vanilla seeds from the pod
Place oats in a large bowl and add the warm honey, almonds and puffed rice. Stir until all dried ingredients are coated in the honey
Spread mix onto grease proof paper on a baking tray
Bake for around 25 minutes
Turn once or twice to ensure the mixture browns evenly
Leave to partially cool and then all remaining ingredients
When completely cool store in an airtight container
Serve with cold milk or soya milk and yoghurt
Add your favourite fresh fruit

I have made a similar muesli to yours and added cinnamon and pecans and gogi berries.
It is really surprising just how easy this is to make and it is so good for you too. No added sugar and low G.I. I had mine with yoghurt, as you've also suggested and it's such a great way to start the day!
Yes it's very easy to make muesli with different ingredients and still taste as good. You're absolutely right, with no added sugar and muesli being low G.I. it's more than a good start to the day.
A good healthy breakfast. Can also be added to low fat yoghurt and berries, which will make it even healthier.
