Broccoli and Potato Bake

'Recipe by CJ'

Ingredients:

Broccoli

New Potatoes

Feta – crumbled

2 tablespoons Olive oil/butter

2 tablespoons Plain flour

300ml Milk

Paprika

Mustard

Canned tuna (optional)

Salt and pepper

Method:

Half the new potatoes and bring to the boil, then simmer until softened

Add the broccoli florets to the potato pan and blanche until slightly softened

Drain broccoli and potatoes and spread in baking dish

Make a béchamel sauce

Heat oil in a pan

Add flour and mix until they form a paste. Keep on very low heat for a minute

Take off heat and whisk in the milk until mixture thickens

Continuously whisking, add mustard to taste and a sprinkle of paprika (and drained canned tuna if using)

Season with salt and pepper to taste

Pour béchamel sauce over broccoli and potatoes in baking dish and bake in the oven for 10 minutes, take out and sprinkle feta evenly over dish, return to oven until feta has melted

  1. This looks a delicious recipe. It's got all my favourite ingredients in too, so it's definitely one for me to try out this weekend.

    1. I haven't tried this particular version myself, but I love pasta bake.
