Bulgar Wheat Summer Salad

Ingredients:

200g Bulgur wheat

150g frozen edamame (soya) beans

2 sweet peppers, seeds removed and sliced

150g radishes, finely sliced

Handful of strawberries, sliced

small bunch mint, finely chopped

1 orange, peeled and sliced

Method:

Cook the Bulgur following instructions, add a vegetarian stock cube for added flavour

Drain and tip into a large serving bowl to cool

Meanwhile, put the edamame beans in a small bowl, pour over boiling water, leave for 1 min, then drain

Put in a serving bowl with the peppers, radishes, strawberries and mint

Peel one orange, carefully cut away the segments and add to the bowl and serve
