Courgette loaf cake
'My version of a recipe adapted from BBC Good Food'
Ingredients:
350g courgettes, coarsely grated
2 eggs
85g soft brown sugar
85g chopped walnuts
140g sultanas, roughly chopped
½ tsp bicarbonate of soda
½ tsp baking powder
Butter for the tin
125ml vegetable oil
1 tsp vanilla extract
300g plain flour
2 tsp ground cinnamon
¼ tsp ground nutmeg
Method:
Heat oven to 180C/160C fan
Butter and line a 2lb loaf tin with baking parchment
Whisk together the eggs oil and sugar then add the courgettes and vanilla extract
Combine the remaining ingredients with a pinch of salt in a separate bowl
Stir the dry ingredients into the wet mixture and then pour into the loaf tin
Bake for 1 hour, or until a skewer inserted into the centre comes out clean
Leave to cool
Serve or freeze for up to 1 month

Looks good and I can also say it tastes good as I made this receipt recently. It is so tasty and amazingly you have no idea it has courgettes in it, so it looks good; tastes good and is good for you too!
