Easy Veggie Chilli Stuffed peppers

Ingredients:
1 veggie mince
1 can kidney beans in chilli sauce
1-1/2 cups grated Mexican cheese
blend 1 medium tomato
finely chopped 2 medium onions
chopped 4 large red peppers
olive oil salt and pepper to taste
Sprinkle of chili flakes Directions
Method:
Cook the onion and veggie mince in a large non-stick frying pan over a medium heat with a little olive oil
Once onions are browned add kidney beans in chilli sauce and salt and heat through, while stirring
Add in 1/2 cup cheese, chopped tomato and a sprinkle of chilli flakes and stir. Meanwhile pre-heat oven
Cut peppers lengthwise in half and remove seeds
Place on a foil-lined baking tray, cut side down and brush with olive oil
Place in hot oven (200c) for 10 mins
With tongs, turn peppers.
Fill with mince mixture; sprinkle with remaining cheese and add to oven for further 10 mins to melt cheese
Serve with green salad and a cold Mexican beer
