Gluten-Free Apple & Almond Cake
'Adapted from BBC Food'
Ingredients:
3 eating apples, peeled, cored and chopped
Juice of a lemon
300g sugar substitute
6 medium free-range eggs
325g ground almonds
1/2 tsp almond essence
50g flaked almonds
icing sugar, for sprinkling
Method:
Preheat the oven to 180C/375F/Gas 4
Lightly grease and line the base of a 25cm/10in tin with a little vegetable oil
Place the apples into a pan with half the lemon juice and two tablespoons of the sugar substitute.
Bring to a simmer, cover and cook on a low heat for about 7-9 minutes or until the apples are soft enough to mash with a fork
Do not over cook. Leave to cool
Put the cooled apple puree, eggs, ground almonds, almond essence, remaining sugar substitute and approximately one tablespoon of the remaining lemon juice into a food processor and blend together
Pour into the cake tin and sprinkle with the flaked almonds
Bake for about 40 minutes or until a skewer inserted into the cake comes out clean
Leave to cool slightly before you remove the cake from the tin
Sprinkle with icing sugar and enjoy
That looks so nice. It reminds me of the afternoon teas, we used to have in tea rooms in the villages near here, in a previous life.

What I find irritating is that although we're all in the same boat right now, at some point that's going to change and people like myself will still be confined to our homes.
Where the UK Government have sought to make new decisions which don't concur with the 3/4 week scientific data, being high-risk it is not possible for me to get back into my life, until I know for sure I will be safe.
