Hot Cross Bun Pudding

'A delicious cross between bread and butter pudding and hot cross bun adapted from Olive Magazine.com'

Ingredients:

200ml low fat cream

400 semi-skimmed milk

3 eggs

75g sugar alternative

1 tsp vanilla extract

2 tbsp

of your favourite liquor such as coffee and cream. Rum or whisky work just as well

Zest of 1 orange

50g butter

8 hot cross buns halved

4 tbsp marmalade 4 tbsp, plus extra to glaze

ice cream or pouring cream to serve

Method:

Pour the cream and milk into a pan, and heat gently to just below simmering point

Whisk together the eggs and sugar in a large bowl

Gradually whisk into the hot milk and cream, then stir in the vanilla extract, liquor and orange zest

The alcohol can be left out if preferred

Butter the buns and spread with marmalade, then stick back together and cut all but one in half so you have 14 semi-circles in total, plus 1 whole

Arrange around the buns in a 26cm round baking dish and pour over the custard. Leave to soak for 15 minutes

Heat the oven to 160C/fan 140C/gas 3 and put in a heavy baking sheet

Gently press the buns down into the custard before putting the dish on the hot baking sheet

Bake for 35-40 minutes or until the custard is just set

Brush with more marmalade and leave in the dish for 10 minutes before spooning out and serving with ice cream or pouring cream

  1. That looks such a nice treat and just the job while we are all stuck at home contemplating the mysteries of life.

    1. Yes, hot cross buns are definitely my favourite treat. I'm not sure about the mysteries of life, understanding life right now, would be a bonus.

  2. I bought all the ingredients last night to make this and hopefully I will give it a try over the weekend. I did cheat a bit and bought ready made custard.

  3. So, I made this yesterday. It was really simple to follow but I left out the marmalade as the store bought custard was super sweet in any case.

    It's delicious. I have to stop myself from eating some every day, but then again!

    1. I am glad you said you liked it. I like sweet things, but the trouble with sweet things is the more you eat, the more you want.

      You'll have to share it out, eat less and let others enjoy your baking. In these difficult times, I think it's important and good for your mental health.
