Red Lentil Soup
Ingredients:
2 tablespoons Olive Oil
2 large onions, cubed
3 carrots, diced
2 stalks celery, diced
2 cups red lentils
½ teaspoon salt
½ teaspoon ground black pepper
¾ cup white wine
2 bay leaves
6 cups vegetable stock
1 sprig fresh parsley, chopped
½ teaspoon paprika
½ cup grated Parmesan cheese
Method:
In a large stockpot, saute the onions in oil until they are soft
Add the paprika, celery, carrots, and saute for 10 minutes
Add in the stock, lentils, bay leaves, salt, and pepper
Stir well, then add the wine and bring the mixture to a boil
Slowly reduce the heat and cook for 45 minutes on a low heat until the lentils are soft
Sprinkle the soup with the optional parsley and Parmesan before serving

I made the red lentil soup a couple of days ago and put a bit of chilli powder in it too; it was even nicer!
Glad you gave it a try. I'm not good with chilli, but I am sure it gave the soup that extra kick!
