Salmon en Croute
Ingredients:
Puff pastry (bought or made)
Salmon fillet,
Mustard and spinach
Method:
With the puff pastry down place salmon on top
Spread evenly with mustard and top with spinach
Then add more puff pastry, close the edges and crimp using the back of a knife
Beat an egg and then lightly brush the pastry, or brush with milk
Sprinkle with salt and pepper
Heat the oven to 200°C/400°F/gas mark 6
Bake the salmon for 20–25 minutes, until the pastry turns a golden brown and crisp
To test to see if it's ready, insert a skewer into the middle
It should feel warm for medium cooked salmon
A skewer that is piping hot indicates that the fish is well done
Leave it to rest for 15 minutes before serving

Thanks Tim... yes, salmon is a really good source of omega 3 that's good. I'm eating less these days, but when I do I prefer roast to poached.
I'm not keen on any salmon smell. Sadly, that's a sensory issue but at least I know now.
