Avocado salad
Easy to make and deliciously refreshing
Ingredients:
Large packet of mixed leaf salad
2 roughly chopped red or orange pepper
3 Ripe avocados, halved, pitted, peeled and thinly sliced
2 Large Ruby Red grapefruits, all peeled and pith removed, cut into segments
4 hard-boiled eggs
The Dressing:
3 teaspoons white grape juice
2 and 1/2 teaspoons apple cider vinegar
2 tablespoons fresh lemon juice
¼ cup olive oil
¼ cup sunflower oil
Pinch of fine sea salt and black pepper
Method:
Whisk first 3 ingredients of the dressing to blend
Gradually whisk in the oils
Season dressing to taste with sea salt and pepper
Arrange mixed leaf on platter
Top with peppers, eggs, olives, avocado and grapefruit
Drizzle with the dressing
This looks a really nice salad. It looks a great recipe to use as a base and swap things around too.
As I don't like avocado, I'd have to swap that for something else; maybe tinned tuna or grilled chicken breast. I don't know if pomegranate is in season now, but pomegranate seeds sprinkled on top would be amazing.
I agree. This salad would be good used as a base for other things too. I think pomegranate and grapefruit would also this salad even more refreshing.
