Boozy Gingerbread Hot Chocolate

Ingredients:
1 litre full fat milk
1 cinnamon stick
3 whole star anise
250g dark chocolate, finely chopped
2 tsps ground ginger
100ml whipping cream
1 tsp chopped crystallised ginger
50ml liqueur of choice
Method:
Put the milk, cinnamon sticks and star anise in a saucepan
Warm over a low heat, stirring, until the milk comes to a simmer and starts steaming
Remove the pan from the heat (remove and discard the whole spices) and gradually whisk in the chopped chocolate (reserving a little for sprinkling on the top and ground ginger until creamy)
Stir in the liqueur of your choice
Whip the cream until it just holds soft peaks
Pour the hot chocolate into warmed mugs and top each with the whipped cream, chopped ginger and reserved chocolate
Serve hot
I like the sound of this! I'd add a good dash of brandy and happy days. Perfect to unwind after a stressful day, hearing how inept the UK government economic policy is.

I agree. Yes, it does sound good. My mum used to say a little bit of what you fancy does you good. I didn't get it until a few years ago, when I realised she was referring to 'mental health.'
But we should still deal with our mental health...
