BOOZY Mince Pies

Still festive? It's never too late to eat Boozy mince pies! Enjoy.

'Recipe adapted from Irish Post.com'

Ingredients:

250g plain flour

100g butter

3 tbsp caster sugar

180ml Baileys Irish cream liqueur

200g fruit mince

1 egg

Method:

After placing the flour in a large mixing bowl, add the butter and rub with your fingertips until they form into breadcrumbs.

Slowly add the castor sugar and stir

Make a well in the centre of the bowl and add 3 tbsp of Baileys, bind the mixture together with your hands to form a dough

(Add another tbsp of baileys if you need to help you achieve this)

Wrap the dough in clingfilm and allow it to rest for 30 minutes in the fridge

Preheat the oven to 200C/390F – grease 8 holes of a muffin tray

Roll the pastry, and cut into 8 rounds with a cutter, and place in the muffin tray

Re-roll pastry and using a smaller cutter, cut out 8 lids

Fill you pies with the fruit mince, then brush the edges with a little egg wash

Place the lids and press slightly with your fingers to close

Lastly place in the oven for 15 to 20 minutes or until golden brown
