Chilli Lettuce Wraps

Ingredients:

Tomatoes

Cucumber

Red onion

Lime juice

Coriander for salsa lettuce

Kidney beans (ones in chilli sauce)

Chilli flakes

Paprika

Tomato puree

Red pepper (chopped up)

Can chopped tomatoes reduced over heat

Tiny bit of cocoa

With natural yoghurt to serve

To serve:

Lettuce, chilli, then salsa and yoghurt then corriander

  1. Looks very tasty. You could add all sorts of things like pan fried chicken breast, fresh tuna or soya.

    Otherwise just enjoy it with big smile on your face knowing it's veggie and doing you the world of good.

    1. Yes, agreed. It's a lovely recipe and 'veggie' would go down well.

      And being vegetarian is not only much better for our health but it's a moral issue too. It would be great if more of us could think about that.
