Creamy salmon pasta
Ingredients:
150g smoked salmon
2 egg yolks
50g garden peas
150 ml half fat crème fraise
2 tbsp chopped parsley
2 finely chopped challots
50 g freshly grated low fat parmesan
200g penne
Juice of half lemon
2tbl fresh chopped chives
Method:
Cook the penne in plenty of boiling, salted water
Cook the peas in boiling water until tender but firm
Gently cook the shallots with a splash of vegetable oil and black pepper
Whisk the egg yolks and crème fraise together with the parsley and season with black pepper
Add to the shallots
Drain the pasta and peas and stir into the creamy sauce and mix well
Add the roughly chopped smoked salmon and the lemon juice
Sprinkle with the Parmesan and chopped parsley

This has to be one of my all-time favourite past dishes. For a while whenever I went out to eat I would order this dish to the point that it got embarrassing as friends and family knew I would order it!
I love it and this looks a great recipe too. It's really easy to make and that dash of fresh lemon juice just before eating, cuts through the cream and it's delicious.
Pasta dishes can be quite high in carbs but if you use low fat creme fraise instead of cream and maybe half fat cheese as you suggest, I wouldn't feel too guilty.
It's mine too! I love pasta, but I tend to use the wheat-free variety. This recipe blends itself for a real treat with a green salad, even with low fat ingredients.
My mum used to say that a little bit of what we fancy does us good. For a balanced diet, I believe all foods should be eaten in moderation. This recipe definitely lends itself to that. I love it.
