Ground Almond and Fruit Flan

Ingredients:

For the flan base

1 1/2 cups ground almonds

1 pinch sea salt

1/4 teaspoon baking powder

1/2 teaspoon ground cinnamon

1 teaspoon pure vanilla extract

3 tablespoons coconut oil or extra virgin olive oil

1 tablespoon water

For the jam filling

150g frozen summer fruits

4 tablespoons Xylitol

1 teaspoon lemon juice

For the topping

3 tablespoons desiccated coconut

Method:

Heat the oven to 180c

Mix all the flan base dry ingredients together

Add the vanilla extract, water and oil until thoroughly combined

Press into a 20cm flan dish using the back of a spoon to press down and up the dish sides

Make sure the dough is pressed evenly and is unform

Place the flan base in the oven and bake for 15-20 mins or until the crust is golden brown

Whilst the base is baking, place the summer fruits and Xylitol into a small saucepan

Bring to the boil then add lemon juice and simmer while stirring

Keep stirring and the jam should thicken after 15 minutes or so

Leave to cool

Remove the base from the oven and let it cool completely to room temperature before filling with jam

Sprinkle with desiccated coconut

    1. Thanks. Yes, good for me too. I fair better with little to no sugar, which isn't great anyway and eating less wheat is also a good thing.

      As you say it's a healthy treat during these strange times, it's also a good mood motivator, which we all need at this time.
