Pasta with peas
nice 'n' easy
Ingredients:
3 tbsp olive oil
3 garlic cloves, finely chopped
1 red chilli deseeded and finely chopped
Zest of 2 lemons
400g pasta
200g fresh or frozen peas
20g pack fresh basil
Method:
Heat 1 tbsp oil in a frying pan and cook the garlic and chilli for a couple of minutes until very lightly golden
Stir in the lemon zest
Cook the pasta, adding the peas for the final 2 minutes
Drain then tip everything back into the saucepan
Tip in the garlic chilli and lemon
Tear in the basil, season and add the remaining olive oil
Stir well
Looks very simple and good. Both qualities I look for in recipes!

That looks so easy. I can imagine using this recipe as a base and swapping/adding all sorts of things like flaked smoked fish, ham or asparagus, with a sprinkle of Parmesan cheese and watching The Big Bang Theory - heaven!
This pasta dish will work with other foods too. If you like cooking, experimenting is a good way to sample other foods whilst introducing another take on the same dish.
I am sure others will agree that after a hard day's work it's always nice to find time to relax!

Just thought I'd post to say that I made this dish at lunchtime today, although I used smoked salmon and not the garlic.
It was quite delicious, although the salmon was a little salty. I think it does this as it cooks, so I might try again, this time may be with broccoli or asparagus.
