Smoked mackerel, and chick pea salad

'This is a wonderful summer salad that is very easy to prepare'

Ingredients:

2 tsp extra virgin olive oil

3 tbsp mustard and honey dressing

Wild rocket leaves, use about 100g (4ozs)

1 can chick-peas;

Smoked mackerel, use about 250g (9ozs)

2 tbsp cut chives to taste

1 finely chopped shallot

Preparation:

Drain chick-peas

Toss the rocket leaves together with the olive oil

Skin the mackerel then cut into large flakes

Add the chick peas, chives and shallot

Finally add all the ingredients to the rocket leaves and serve

You can also add runner beans; anchovies or peas

  1. I'm not much of a fish eater and have never had mackeral. But this recipe sounds pretty good.

  2. This recipe sounds delicious.

    I guess you could use the basic ingredients and change the fish and use tuna or smoked salmon and change the chick peas as you suggest, to get loads of different variations.

    I can see myself with a plate of your smoked mackerel salad, sat on the decking with an ice cold Bud. Heaven!

    1. Yes of course, that's the nice thing about salads... they are very interchangeable. It's completely delicious.
