Ingredients:
Fresh strawberries and raspberries
Freeze-dried strawberries (optional)
1–2 tsp monk fruit concentrate (or sweetener of choice)
Granola (sugar-free)
Greek yogurt (or plant-based alternative)
Method:
Prep the Berries
Wash and dry the strawberries and raspberries
Slice half of the strawberries, and dice the other half
To Make the Strawberry Compote
Place the diced strawberries in a microwave-safe container with a lid
Add a splash of water (about 1–2 tablespoons)
Microwave on high for 2 minutes, pausing halfway through to stir
Let it cool slightly, then sweeten with monk fruit concentrate to taste
Assembling the Parfait
In a parfait glass or jar, layer half the granola at the bottom
Add a layer of Greek yogurt
Arrange some raspberries and sliced strawberries on top
Spoon in some of the strawberry compote
Add the remaining granola on top and finish with extra raspberries and freeze-dried strawberries if using
