The Best Summer Salad
'Adapted from a recipe by BBC Good Food'
Ingredients:
For the salad
400g tin kidney beans
drained 2 handfuls baby spinach leave roughly chopped
500g large tomatoes chopped into chunks 1/2 cucumber
thickly sliced and chopped 1 mango
peeled and chopped into chunks
1 medium red onion
finely sliced 6-8 radishes
thinly sliced 2 avocados, peeled and sliced
100g feta cheese, crumbled
handful of pomegranate seeds
For the dressing
Large bunch fresh mint small bunch coriander small bunch basil
100ml extra virgin olive oil 2 limes
zested and juiced 2tbsp white wine vinegar
Method:
Make the dressing by blending all of the ingredients in a food processor (or very finely chop them), saving a few herb leaves for the salad
Scatter the beans and spinach over a large platter
Arrange the tomatoes, cucumber, mango, onion and radishes on top and gently toss together with your hands
Top the salad with the avocados, feta and herbs, sprinkle with the pomegranate seeds
and serve with the dressing
This is the BEST summer salad recipe ever. I have been making a similar salad for years.
It's quick and easy and simple. You can swap any of of the main ingredients and it still works. You can try left over chicken instead of the feta or tinned tuna, and black beans, or chick peas instead of the kidney beans.
Pineapple or apple work just as well, instead of mango too. You can't go wrong with this recipe, it really is that good!
