Winter Vegetable and Lentil Soup

Ingredients:
85g dried lentils
2 diced carrots
3 sliced celery sticks
2 small sliced leeks
2 tbsp tomato puree
1/2 tbsp dried thyme
1 tbsp vegetable stock powder
1 tbsp cumin powder
A little creme fraiche (optional)
Method:
Tip all the ingredients into a large pan. Pour over 1 1/2 litres of boiling water and stir well
Cover and leave to simmer for 30 minutes until the vegetables and lentils are tender
Ladle into bowls and eat straight away
For a creamy thick texture, add a couple of tablespoons of creme fraiche
Mix with a third of the soup blitzed with a hand blender, or in a food processor
I love winter warming soups and this recipe looks really nice and simple too. Add a warm crusty bread, a log burner and a xmas movie and that's my perfect evening.

I made a variation on this soup yesterday and added some brown rice and some chilli flakes and it was delicious. I even had the leftovers tonight!
Sounds good. I do eat Winter Vegetable and Lentil Soup, but it's not my favourite food. Good for you, but definitely not my favourite.
