Mushroom Chocolate Bars

Recipe adapted from "bigoven.com"

Ingredients:

11 oz 80% or higher, quality dark chocolate

1 tbsp Honey

1 tsp Coconut oil

3 tsp Functional mushroom powder

1/3 cup Roasted chopped pistachios

1/4 tsp Sea Salt

1/3 cup Dried chopped apricots

2 tbsp Chia seeds

1 tbsp Flakey sea salt ; like fleur de sel

Serves 8

Method:

Line a quarter sheet pan with parchment paper or silicone mat and set aside

Add the chocolate, honey and coconut oil, to a heat-proof bowl and set over a pot of barely simmering water to melt

Once melted, stir in the mushroom powder, coconut oil and salt until combined

In an even layer, pour about half of the chocolate onto the prepared sheet pan to create a rectangle

Sprinkle about half of the pistachios, apricots, and chia seeds evenly across the chocolate

In a second layer, carefully pour the remaining chocolate over the toppings using a spatula to smooth the surface

Sprinkle the remaining toppings evenly across the top and finish with the sea salt

Place in the refrigerator for 30 to 45 minutes or until hard. Break into pieces and enjoy!

You can find functional mushroom powder on-line, in the supplement section of well-stocked grocery stores, or your local health food market
