Nanaimo Bars

'Adapted from: nanaimo.ca and cookingnook.com'

Ingredients:

First layer

120 g butter

50 g sugar

45 ml cocoa powder

1 egg, beaten

5 ml vanilla essence

300 g crushed digestive biscuits (if you can't get graham wafer crumbs)

60 g desiccated coconut

60 g chopped nuts (walnuts, pecans, or almonds)

Second Layer

80 g butter

400 g icing sugar

45 ml custard powder

45 ml warm water

Top Layer

200 g dark chocolate

40 g butter

Method

To make the first layer:

Place butter, sugar and cocoa in a heatproof bowl over a pan of boiling water and stir until smooth. Add egg and vanilla. Remove from heat. Add biscuit crumbs, coconut and nuts. Spread the base mixture in an 8 inch square pan and press down firmly. Place it in the fridge while preparing the second layer.

To make the second layer:

Mix the butter, cream, custard powder, and icing sugar together and beat until light

Spread over the first layer

To make the top layer:

Melt the butter and chocolate together over a pan of boiling water. Pour over the second layer of the Nanaimo bars. Return the bars to the fridge

Cool for 30 minutes before slicing into squares and enjoy with your favourite coffee

    1. Thanks... yes, it definitely appeals to the sweet tooth. Partial to a little chocolate myself, it is both yummy and delicious.
