Parsley Pesto Pasta
'Adapted from Goodhousekeeping.com'
Ingredients:
500g fresh linguine
1 clove garlic
Crushed bunch fresh parsley
1/4 cup toasted walnuts
1/4 cup olive oil
1/4 cup freshly grated parmesan
1/4 cup frozen garden peas 1tsp chilli flakes
1/2 lemon, juice and zest salt and pepper to season
Method:
Cook the pasta as per the instructions
Blend garlic, parsley, nuts, olive oil and parmesan in food processor
Cook peas for a couple of minutes in a little water
Toss cooked pasta with the pesto and add the chilli flakes to taste
Add peas and mix well
Drizzle lemon juice and zest over
Season to taste and serve
This looks really yummy and a great base to start adding your favourite ingredients.
I'd add some smoked salmon save some parmesan to sprinkle on top and enjoy it with a bottle of Bud. Heaven.
Thanks. Yes, the recipe is great and I absolutely love pasta. It's a good form of carbohydrates, which means you keep fuller for longer.
It's a shame I struggle with some of the ingredients, but as you say, the recipe is interchangeable.
