Springtime Pasta

Ingredients:

400g Penne pasta

200g bag shredded kale

100g streaky bacon, chopped

1 medium red onion, finely sliced

100g soft mild goat's cheese

Grated Parmesan, to serve

Method:

Boil the pasta in salted water

Add the kale for the final 2 minutes, then drain

Meanwhile, fry the bacon in a nonstick pan until crisp

Remove from the pan and gently fry the onion in the fat for 2-3 minutes until soft

Tip the cooked pasta and kale into the pan then stir through the bacon and goat's cheese

Serve in bowls with grated Parmesan

  1. Sounds like it could be a tasty recipe! I'll have to try it out sometime soon, since it seems like spring is just around the corner here in Maine.

  2. Tried this recipe tonight; well sort of!

    I forgot to buy kale, so used broccoli tips and asparagus spears and replaced the bacon with smoked haddock. Also added some pesto. It tasted superb.

    1. Improvised recipes work out just as well and in some cases probably better than the original recipes. Glad you liked it.

    Not that the weather in the UK knows it's nearly summer. 🙁
