Fruit Jam

Ingredients:

5 cups fresh berries (about 500g or 1lb), such as strawberries, raspberries, blueberries or blackberries

1/2 Cup granulated sugar

2 tablespoons freshly squeezed lemon juice

Pinch salt

Method:

Cut the fruit into even pieces

Mash the fruit and sugar together

Bring the fruit to the boil over a medium heat, and simmer for 20 minutes stirring occasionally

When done, dribble some hot jam onto a frozen spoon and wait a few seconds for it to cool

Run your finger through the jam. If it makes a clear gap and doesn't fill in, then you have a good set

When the jam is set remove the jam from the heat and transfer to clean jars

Cover and cool completely before moving the jam to the fridge for long-term storage

  1. This is a timely recipe as the hedgerows near us are full of berries at this time of year. I have never made jam but would love to have a go.
