Gnocchi with Veggie Sausage and Kale

Ingredients:
1 medium pack potato gnocchi
2 tablespoons olive oil
1 pack meat free sausages
1 medium onion, finely chopped
1 cup vegetable stock
1 tbs plain flour
1/2 cup white wine
2 good handfuls fresh kale (works just as well with a handful of chopped spinach)
1/2 cup creme fraiche
2 tbs grated Parmesan cheese
Method:
Cook the gnocchi according to instruction on the pack. Meanwhile, in a large frying pan, heat oil over medium-high heat, cook sausages and onion until the sausage is browned and the onion is tender
Remove sausage and thinly slice and return to pan
Stir in wine. Bring to a simmer and cook until liquid is reduced by about half
In a small bowl, mix the flour and stock until smooth, stir into sausage mixture
Return to a boil, stirring constantly, cook and stir until thickened, then add spinach (or kale) and creme fraiche and stir until spinach is wilted (or kale soft-ended)
Drain gnocchi, add to pan, and heat through
Sprinkle with cheese and serve with crusty bread
This looks really tasty and perfect for the damp winter evening we are having here in the UK. As a non-meat eater I am looking forward to making this.
